The upshot, is that you don't have a VNC server installed and running. Obviously, you'll need a jailbroken iPhone, and install "UIkit Tools" from Cydia. You'll also need to have OpenSSH installed if you don't already. Then SSH into your phone as the mobile user. Then just run the "uishoot" command, and the phone will take a screenshot the same as if you'd held down the Home & Lock/Sleep buttons.
